Apple & Onion Black Forbidden Rice

INGREDIENTS

1 cup black forbidden rice, rinsed
2 cups water
2 tablespoons extra virgin coconut oil
1 sweet onion, julienne cut
2 Pazazz apples, diced
½ cup finely chopped kale leaves, stems removed
¼ teaspoon sea salt
Fresh black pepper to taste

DIRECTIONS

Place rinsed rice in a large saucepan and cover with 2 cups water. Bring to a boil, cover, reduce heat, and simmer 30 minutes until water is absorbed. Remove from heat and let steam for 10 minutes.

In large sauté pan, heat 2 tablespoons coconut oil on medium. Add onions and sauté for 3 minutes until softened. Add diced apples to onions and cook for an additional 3 minutes until apples soften. Add apple and onion mixture to cooked rice and toss. Add finely chopped kale and season with sea salt and fresh cracked pepper to taste.
