Crunchy Beet Slaw with Pazazz

INGREDIENTS

1 large Pazazz apple, peeled and grated
2 medium-large fresh beets, peeled and grated
⅓ cup fresh mint, chopped
1 ½ teaspoon+ sea salt (to taste)
⅛ cup + 1 tablespoon L&B California olive oil
¼ cup L&B aged balsamic vinegar
1 tablespoon L&B honey

DIRECTIONS

Add apple, beets and mint to a medium bowl, sprinkle with salt. In a small bowl, whisk together the olive oil, vinegar and honey until thoroughly thick and combined; pour over the apple/beet combo and toss.
